Spinach flan is a tasty main course or side dish, easy to make and irresistible.
Simple, soft and melty, covered by a crispy and flavorful crust, it’s a perfect dish to get your fill of vegetables in a tasty way without sacrificing flavor.

Ingredients
- 12 oz fresh spinach (about 12 cups loosely packed (fresh))
- 2 eggs
- 1 1/4 cups all-purpose flour
- 1/2 cup milk
- 1 clove garlic
- 7 oz scamorza (or provola (about 1 cup diced))
- grated Grana Padano (or Parmesan)
- extra virgin olive oil
- salt
Preparation of the Spinach Flan
Place the spinach in a colander and wash them well under running water.
Let them drain.
Peel the garlic clove.
In a large skillet warm a drizzle of extra virgin olive oil and lightly brown the garlic.Add the spinach and let them cook for about ten minutes, covering the pan with a lid and stirring from time to time.
Remove the garlic clove and let the spinach cool slightly.
Cut the scamorza into cubes.
In a bowl beat the eggs with a generous pinch of salt using a whisk.Add the flour, stirring constantly with the whisk to avoid lumps, then add the milk, stirring again, and finally fold in the diced scamorza and then the spinach, mixing thoroughly with a spatula.
Grease a baking dish, pour in the prepared mixture and level it.
Sprinkle plenty of grated Grana Padano (or Parmesan) over the surface and bake in a preheated conventional oven at 392°F for twenty-five minutes.
Remove from the oven, let cool slightly and serve your spinach flan.
