Ingredients

  • 2 eggs (medium, at room temperature)
  • 1 cup erythritol
  • 1 pinch salt
  • 2 apples
  • 7 tbsp sunflower seed oil
  • 1.5 cups all-purpose flour (type 00)
  • 1/3 cup potato starch
  • 1 tbsp baking powder
  • 3.5 tbsp milk
  • 1/3 cup raisins
  • 1 teaspoon vanilla extract
  • 2 tbsp sliced almonds

For the sugar-free apple cake you will need

  • 1 Cake pan 8 in
  • 1 Bowl
  • Electric whisk
  • 1 Sieve
  • 1 Spatula

Preparation of the sugar-free apple cake

The preparation of the SUGAR-FREE APPLE CAKE is very easy and quick.

  • Soak the raisins in warm water for 10 minutes.
    Meanwhile, in a bowl beat the eggs with the erythritol and a pinch of salt until pale and frothy. Add the seed oil, the milk at room temperature, the vanilla extract and mix well to incorporate.

  • Add the sifted flour, potato starch and baking powder. Mix everything until you obtain a smooth, lump-free batter. If it seems too firm don’t worry, that’s the consistency it should have.
    Finally fold in the diced apples and the drained raisins.

  • Fold them in with a spatula, pour the batter into a buttered and floured 8-inch springform pan. Level it and sprinkle the surface with the sliced almonds.

  • Bake the sugar-free apple cake in a preheated conventional oven at 356°F for 50–55 minutes. Check for doneness with the classic toothpick test.

    Once baked, remove the sugar-free apple cake from the oven and let it cool completely. Then remove from the pan and dust with powdered sugar.

The sugar-free apple cake keeps for about 2–3 days at room temperature in a cool, dry place, covered with a cake dome or wrapped in plastic wrap. If it’s very warm, it’s better to store it in the refrigerator, where it lasts up to 5–6 days.
