- 1 medium yellow onion
- 1 1/2 tbsp butter
- as needed extra virgin olive oil
- 1/2 cup white wine
- 2 lemons (untreated (unwaxed))

PREPARATION OF TURKEY SCALOPPINE WITH LEMON
The preparation of the TURKEY SCALOPPINE WITH LEMON is very easy and quick.
In a large pan place the butter, a drizzle of oil, the finely chopped onion and a pinch of salt. Turn on the heat and let it soften over low heat.
Meanwhile, pass the slices of turkey breast (remove excess fat) in flour, shake off the excess and set aside.
When the onion has softened, put the meat in the pan and brown it on both sides for 2-3 minutes, taking care not to burn the onion. You can remove the onion when you add the meat and put it back when the meat is browned.
Deglaze with the wine and as soon as it has evaporated season with salt and pepper. Add the juice of two lemons and a few finely grated lemon zests (without the white part). Continue cooking over low heat until you obtain a smooth and homogeneous sauce. If needed, add a splash of water.
At the end of cooking add the finely chopped parsley.
