Ingredients
- 2.2 lbs rabbit
- 1 clove garlic
- 1 onion
- 1 red bell pepper (large)
- 1 yellow bell pepper (large)
- 3.5 oz olives (mixed, pitted (about 1/2 cup))
- 1 cup white wine
- 2 cups water
- rosemary
- thyme
- extra virgin olive oil
- salt
- black pepper
FOR RABBIT WITH PEPPERS AND OLIVES YOU WILL NEED
- 1 Pan
- 1 Cutting board
- 1 Knife
PREPARATION RABBIT WITH PEPPERS AND OLIVES
Put the garlic clove, the onion and the oil in a pan. Brown over low heat for 5 minutes, then add the rabbit and brown it well on all sides.
Deglaze with the wine and when it has evaporated add one cup of water, the rosemary, the fresh thyme leaves, salt, pepper and continue cooking for about 40 minutes.
If during cooking the meat becomes too dry, add more water.
When there are 20 minutes left of cooking, wash the peppers, remove the seeds and inner membranes and cut them into strips about 3/8 inch thick.
Add the peppers to the rabbit, then add the pitted black olives, season with salt, cover with the lid and continue cooking until they become tender.
Turn off the heat, let the rabbit with peppers and olives rest for 5 minutes, then serve.
STORAGE
You can keep the rabbit in the refrigerator in an airtight container for up to 1 day.
