- 6 tbsp + 1 tsp granulated sugar
- 3 tbsp sunflower seed oil (or neutral vegetable oil)
- 1/4 cup plain yogurt
- 2/3 cup all-purpose flour
- 3 tbsp potato starch (or cornstarch)
- 2 1/2 tsp baking powder
- 3 tbsp unsweetened cocoa powder
- 1 tsp ground cinnamon

PREPARATION PEAR, CHOCOLATE AND CINNAMON MUFFINS
The preparation of the PEAR, CHOCOLATE AND CINNAMON MUFFINS is very easy and quick.
In a bowl beat the egg with the sugar until pale and frothy. Add the yogurt at room temperature, the oil and incorporate well. Then add the sifted flour, starch, cocoa and baking powder and the cinnamon.
Mix all the dry ingredients well until you obtain a smooth and homogeneous batter and add the pear cut into small cubes. Gently fold it in with a spatula.
Line the muffin tin with paper liners. Fill them to 3/4 and bake in a preheated conventional oven at 356°F for 20 minutes.
As always, check doneness with the toothpick test.
When the muffins are dry in the center, remove them from the oven and let them cool slightly. Then unmold them and let them cool on a wire rack.

STORAGE
Room temperature storage
Duration: 2 days.
Method: Place them in an airtight container or cover them with plastic wrap.
Add a sheet of absorbent paper on the bottom and on top of the muffins to absorb moisture and prevent them from becoming too soft.
Refrigerator storage
Duration: 4-5 days.
Method: Store them in an airtight container.
If possible, take them out of the fridge about 30 minutes before serving to bring them to room temperature so they keep a soft texture.
Freezer storage
Duration: Up to 3 months.
Method: Wrap each muffin in plastic wrap or place them in freezer bags.
To thaw, leave them at room temperature for a few hours or briefly warm them in the oven at low temperature (about 302°F) to bring back their softness.
