This recipe is ideal for both a Sunday family lunch and a casual dinner with friends: with just a few ingredients and about twenty minutes at the stove, you can achieve a result that’s finger-licking good. If you have fresh squid available, the taste will be even more authentic, but you can also use frozen ones, as long as they are well cleaned and cut into rings.

Ingredients for Squid Sauce Pasta

  • 1.1 lbs dry egg pasta
  • 1.1 lbs squid
  • 14 oz crushed tomatoes
  • 2/3 cup white wine
  • 1 clove garlic
  • 2 tbsps extra virgin olive oil
  • 3 sprigs parsley
  • to taste salt
  • to taste black pepper

Recipe for Squid Sauce Pasta

  • Start preparing the squid sauce pasta by cutting the squid into rings.
    Wash, dry, and chop the parsley.
    Heat the extra virgin olive oil in a pasta sauté pan or pan.
    Add a clove of garlic and the parsley stems.
    Let sauté for 2-3 minutes.

  • Remove both the garlic clove and the parsley stems from the pan.
    Add the squid rings and cook for 5 minutes.
    Deglaze with white wine and let it evaporate completely.

  • Add the crushed tomatoes to the squid.
    Mix well with a spoon and adjust with salt and black pepper.

  • Cook the squid sauce for about twenty minutes on low heat, adding water as needed.

  • Cook the pasta in salted boiling water and drain while it’s still al dente.
    Add it to the pan with the squid and stir-fry for a couple of minutes.

  • Finish the preparation with freshly chopped parsley and a drizzle of extra virgin olive oil.
    Serve the squid sauce pasta immediately.
