The MASCARPONE AND COFFEE TRUFFLES are simple little sweets that take 15 minutes to prepare, and are usually devoured in equally little time by my dessert-loving friends. Perfect to serve at the end of a meal with coffee, they are also ideal for many other occasions when you crave a small delight capable of bringing a smile even on a gray or tiring day.
The goodness of these truffles lies in their softness and in the well-tested combination of mascarpone, cookies and coffee — a blend we Italians know well from classic tiramisu, which is also dusted with unsweetened cocoa, just like these sweets. This recipe is also perfect to offer to children, but there is a variation I personally like a lot that replaces part of the coffee with good rum.
In that case the truffles are a bit livelier but, I assure you, just as delicious and very creamy. Try them and let me know.

Ingredients
- 10.6 oz (about 3 cups) dry cookies
- 8.8 oz (about 1 cup) mascarpone
- 3 fl oz (about 1/3 cup) coffee (cold)
- 2.1 oz (about 1/2 cup) powdered sugar
- 0.9 oz (about 5 tbsp / ~1/3 cup) unsweetened cocoa powder

- 1 Spatula

- 1 Hand whisk
Steps
For the MASCARPONE AND COFFEE TRUFFLES, first prepare a moka pot of coffee and let it cool.
Place the dry cookies in a food processor and grind them finely. You can use any cookies you prefer or mix different types.
In a bowl, place the mascarpone, powdered sugar and the cold coffee. Then mix everything with a hand whisk until you obtain a smooth cream.
Add the crushed cookies and combine them well with a spoon or spatula. The mixture should be fairly firm. If it isn’t, add more crushed cookies.
Scoop out a teaspoon of mixture and form small balls. Roll them in the unsweetened cocoa and place them in paper liners.
To give them a crunchy touch, you can roll them in chopped almonds, walnuts or hazelnuts.
Place the truffles on a tray and transfer them to the refrigerator to firm up until serving time.
