Ingredients
- 1 roll puff pastry
- 4 yellow onions
- as needed extra virgin olive oil
- 2 teaspoons sugar
- to taste salt
- to taste black pepper
- 1 oz pine nuts
- 2 leaves basil
- as needed milk

PREPARATION OF PUFF PASTRY ONION PIZZETTES
The preparation of the PUFF PASTRY ONION PIZZETTES is very easy and quick.
Peel the onions and slice them thinly. Pour a drizzle of oil into a pan, warm it up and add the onions. Season with salt and pepper and sauté over medium heat for 10 minutes. Add the sugar, a splash of water and continue cooking over moderate heat for another 10 minutes or until they turn golden. Turn off the heat and let cool.
Meanwhile, toast the pine nuts in the oven or in a pan for a few minutes until fragrant, then remove and add them to the onions. Also add the torn basil leaves and mix.
Unroll the puff pastry and, using a cookie cutter or a small bowl, cut out 6 circles about 4 in (10 cm) in diameter.
Place them on a baking sheet lined with parchment paper and fill the center with the onion mixture, leaving the edges free.
Brush the edges with milk and bake in a preheated convection oven at 356°F for 15 minutes or until golden.
