Ingredients
- 1 lb 12 oz squid (rings or strips)
- 1 red bell pepper
- 1 yellow bell pepper
- 1 spring onion
- to taste extra virgin olive oil
- to taste salt
- to taste black pepper

Steps
As a first step, rinse the squid thoroughly under cold water and let it drain.
Trim the spring onion and slice it not too thinly. Pour a drizzle of olive oil into a large pan and soften the spring onion.
Meanwhile, halve the bell peppers, remove the seeds, inner membranes and stem, then wash, drain and cut them into strips not too thin and then into diamond shapes.Add the peppers to the spring onion, season with salt and pepper and cook over medium heat for 10 minutes.
Add the sliced squid and let everything cook over low heat for another 10 minutes.
When the squid is cooked and the peppers are still meaty, let the cooking juices reduce slightly and remove the pan from the heat.
Plate and enjoy the squid with peppers in all its simple goodness.
