Ingredients
- 2 eggplants
- to taste tomato sauce (seasoned with salt and oil.)
- 1/4 cup parmesan
- 1/2 cup scamorza cheese
- 1 egg
- 1/3 cup breadcrumbs
How to Make Eggplant Bundles
Start by trimming the already washed eggplants, then slice them quite thinly.
Place the eggplant slices on a baking tray covered with parchment paper, salt them, and bake at 400°F for about 10 minutes.
When cooking is finished, remove them from the oven. Take two pieces and arrange them in a cross.
Then, season with the tomato sauce and proceed by adding a piece of cheese, such as scamorza or another type of soft cheese.
Close the ends to create a bundle. Secure it with a toothpick and set aside.
At this point, dip the eggplant bundles first in the egg and then in the breadcrumbs.
Transfer all the eggplant bundles to a baking dish and season with Parmesan and a drizzle of oil.
Bake at 400°F for about 10-15 minutes.
Storing the Eggplant Bundles
This preparation can be safely stored in the refrigerator for about 3 days in an airtight container. Freezing is not recommended.
