Season with a pinch of oregano.
Add the chives, close the lid, and give a first blend to the mixture.
Open the blender again and add a drizzle of extra virgin olive oil.
Finally, add a tablespoon of vinegar and a pinch of salt.
Blend again to obtain a smooth and homogeneous cream.
With the help of a round cutter, cut out circles from the sandwich bread.
Spread a generous spoonful of feta cream on one disk and close with a second disk.
Continue in the same way until all ingredients are used up.
Wash, clean from impurities, and trim a cucumber.
Use a peeler to cut very thin slices of cucumber lengthwise.
Skewer the cucumber slices onto Christmas decorative skewers to form a sort of “Christmas tree”.
Insert each cucumber tree onto the sandwich with feta cream.
Place all the sandwiches on a serving plate and serve your Christmas appetizer with feta at the table.
You can serve the appetizer immediately, or prepare it a few hours in advance and then store it in the fridge until ready to serve.
