Ingredients for broccoli and cotechino
- 14 oz broccoli (mixed, weighed already cleaned)
- 1 precooked cotechino (500 g)
- to taste fine salt
- to taste mixed peppercorns (freshly ground)
- 2 tablespoons extra virgin olive oil
Steps to prepare broccoli and cotechino
Clean the broccoli, wash them, cut the small florets and boil them in slightly salted water for about 25 minutes, then drain them and set aside.
Cook the cotechino according to the instructions (usually boiling in its packaging for 20 minutes), once cooked, drain it from the liquid it releases, and let it cool.
When the cotechino is cold, remove the skin and cut it into small cubes, place it in a pan with the boiled broccoli florets, season with salt and pepper and heat over medium flame for 10 minutes, before serving, season with raw oil and mix, enjoy your meal!
