The WALNUT COOKIES are delicious little treats, super crunchy and very tasty, at least in the version I present, which derives from American tradition. They are perfect for breakfast, dipped in coffee with milk, but they are so good that you can offer them at many other times of the day, from an afternoon snack to a dessert after a meal, to accompany coffee.

These cookies are simple and quick to make and can be prepared in large quantities, for a good family stash or for possible Christmas gifts, always appreciated. The simplicity of the cookie and its crispness enhance the delicate but unmistakable flavor of the walnuts, and their crunchiness makes them pleasant to nibble on at any time. Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 pinch salt
  • 2/3 cup walnut kernels (chopped)
  • 3 1/2 tbsp butter (soft)
  • 7 tbsp vegetable oil
  • 3/4 cup sugar
  • 1 egg (medium, at room temperature)
  • 12 walnut halves (for decoration)

Steps

  • Preparing the WALNUT COOKIES is really very simple.

    First of all, take the butter out of the fridge and leave it at room temperature for at least 30 minutes, as you will need it soft.

    Place it in a bowl and work it with the beaters until creamy. Add the vegetable oil and incorporate it well.

    Add the sugar and mix. Finally add the egg and work everything until you obtain a smooth and homogeneous mixture.

  • In a bowl sift the flour, baking powder and baking soda. Add a pinch of salt and the chopped walnuts. Mix and combine with the wet mixture.

    Work everything until you obtain a homogeneous dough that is not too soft. If needed, add a little more flour.

    Cover the bowl with plastic wrap and place the dough in the fridge for 10 minutes.

    Take pieces of dough weighing about 1 oz, then shape them into balls with your hands and place them on a baking sheet lined with parchment paper.

  • Space them apart and press a small indentation in the center with a finger. Place half a walnut kernel on each and press it slightly.

    Bake the walnut cookies in a preheated, conventional (static) oven at 320°F for 30 minutes.

  • When they are baked and golden, remove them from the oven and let them cool on a wire rack so they dry perfectly. If you like, you can dust them with powdered sugar.

STORAGE

You can store the WALNUT COOKIES in a tin cookie box. The more days pass, the tastier they will become, as the flavors will have time to blend perfectly.
