Ingredients for about 25 cheese sticks
- 1 1/2 cups all-purpose flour
- 1/2 cup butter
- 2 egg yolks
- 1 pinch salt
- 3/4 cup grated Parmesan cheese
- to taste pepper
- 1 egg white (for brushing)
- 1 tbsp water (cold (only if necessary))

Preparation of cheese sticks
The preparation of these sticks is extremely quick, we should proceed as if we were making a savory shortcrust pastry and then let the dough rest for half an hour in the fridge. To prepare the cheese sticks we can use a stand mixer with a paddle attachment or knead by hand, the sequence of steps is always the same, now follow me and let’s prepare them together!
In the bowl of the stand mixer (or on the work surface) combine the flour, cold butter in pieces, the two yolks and the grated Parmesan, add the salt and pepper and start kneading until you get a coarse and “crumbly” mixture.
Compact the dough well, create a ball that we will wrap in plastic wrap and then let it rest in the refrigerator for about half an hour.
After the resting time, take the dough and roll it out between two sheets of parchment paper without adding flour (this way we avoid dirtying the work surface), roll out to a thickness of one inch, no more, preferably giving it a square shape.
Now with the help of a long-bladed knife, cut the dough into sticks about 4 inches long and 3/4 inch wide (choose the size according to your tastes, I chose this size because I think they are perfect that way) and transfer the sticks you make onto a baking tray lined with parchment paper, spacing them a few inches apart.
Lightly beat an egg white and then with the help of a kitchen brush, brush our sticks, which will be baked at 428°F in a static oven for about 7/8 minutes or until golden brown on the surface.
Once baked, let our sticks rest until they are completely cool, as moving them earlier might break them, and then we can enjoy them in all their goodness!

Can I store them in the fridge?
You can prepare the savory shortcrust pastry even a day in advance and let it rest in the fridge, once taken out, let it soften a bit, and proceed to cut the sticks.
And if I want to make them even more flavorful?
You can mix Parmesan and Pecorino cheese in the proportions you prefer, I often make them this way and they are delicious, but you must love the taste of Pecorino Romano!
How long can I store them?
If any are left over, store them in a well-sealed tin box, they remain crispy for a couple of days.
