- 1 tsp amaretto liqueur (or bitter almond liqueur)

Steps
The preparation of the CINNAMON TART WITH APPLES AND AMARETTI is very easy and within everyone’s reach.
In a bowl combine the flour, cinnamon, sugar and a pinch of salt. Mix the dry ingredients, make a well in the center and add the cold butter cut into pieces. Work everything quickly until you obtain a sandy dough.
When large crumbs have formed, add the whole egg and the yolk and mix quickly until you obtain a compact dough ball.
Wrap the cinnamon shortcrust pastry in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
Peel the apples, remove the core and cut them into not-too-large cubes.
Place them in a frying pan with the butter and cook for 10 minutes over medium-low heat. Then let them cool.
Beat the softened butter (left at room temperature for 30 minutes) with the sugar until creamy. Add the egg, the flour, the finely crumbled amaretti and the liqueur, then mix thoroughly with a spoon.
Roll out the pastry on a lightly floured surface to a thickness of about 1/8 in. Butter a tart pan 8 in in diameter and line it with the pastry. With the scraps you can make delicious cookies.
Arrange the apples on the base and press them down well.
Pour the amaretti mixture over the apples and level it well with the back of a slightly moistened spoon.
Cover with another disk of pastry rolled a little thinner and seal the edges well. Then prick the surface.
