Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter (cold (about 125 g))
- 2 tsp ground cinnamon
- 1 egg (medium, at room temperature)
- 1 egg yolk
- 1 pinch salt
- 14 oz fondant (sugar paste) (in different colors)
- as needed water
- as needed powdered sugar

Steps
Preparing the CHRISTMAS TREE COOKIES is very easy. First, make the cinnamon shortcrust pastry.
In a bowl, combine the flour, cinnamon, sugar and a pinch of salt. Mix the dry ingredients, make a well in the center and add the cold butter cut into pieces. Work the mixture by pinching it with your hands.
When coarse crumbs have formed, add the whole egg and the yolk and quickly mix everything until you obtain a compact dough ball.
Wrap the cinnamon shortcrust pastry in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
After chilling, roll the dough to a thickness of about 1/8 inch (3 mm) and use a cookie cutter to cut out many little trees. Use a toothpick to make a hole at the tip of each tree.
Place the Christmas tree cookies on a baking sheet lined with parchment paper and bake in a conventional oven at 356°F for 15 minutes.
Remove from the oven and let cool completely.For decorating, roll out the fondant using some powdered sugar and decorate by rolling over it with an embossed rolling pin or, if you don’t have one, decorate as you like.
To help adhere the fondant to the cookie, brush a very light film of water on each cookie. Remember, only a tiny amount is needed.
Make a hole in the fondant corresponding to the hole in the cookie.You can do the same to give the fondant a shine once it has dried.
When the fondant has dried, thread ribbon or raffia through the hole of each cookie to hang them on the Christmas tree.
