The APPLE AND ORANGE CAKE is a simple and delicate dessert, perfect to bring to the table for breakfast or, if you prefer, at any other time of the day, even as an after-dinner dessert, perhaps with a scoop of vanilla ice cream. It’s a homemade cake but, as you’ll easily discover, truly delicious: soft with a crunchy crust on the surface that makes it highly tempting.
Its goodness lies in the combination of apples, which give a soft creaminess to the batter, and orange juice which, together with the zest, provides an intense citrus aroma that is really pleasant.
The two traditional cold-season fruits – apples and oranges – marry wonderfully in this cake, which turns out light and rich in nutrients, with fruit and yogurt foremost, helping us face the day with the right energetic boost.

Ingredients
- 3 Golden apples
- 2 eggs (medium, at room temperature)
- 3/4 cup granulated sugar
- 1/2 cup plain natural yogurt
- 2 1/3 tbsp sunflower oil
- 3 1/3 tbsp orange juice
- orange zest
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tablespoon sugar (for sprinkling the surface)

Steps
To prepare the APPLE AND ORANGE CAKE, in a bowl beat the eggs, which should be at room temperature, with the sugar until they become pale and very frothy. Add the plain yogurt at room temperature, the orange juice, the sunflower oil and the orange zest.
Mix everything well. Sift in the flour with the baking powder and incorporate thoroughly.
Add one and a half peeled apples cut into cubes and fold them in with a spatula. Butter and flour an springform pan 8 in, pour in the batter and level the surface.
Decorate with the remaining half apple, unpeeled, sliced not too thinly.
Sprinkle the surface with a tablespoon of granulated or cane sugar.
Bake the apple and orange cake on the second rack from the bottom in a preheated static oven at 356°F for about 50 minutes. As always, check the doneness by performing the classic toothpick test.
Once baked, remove it from the oven and let it cool completely, then unmold and enjoy it for breakfast or an afternoon snack.
