Ingredients
- 4 oz mixed pasta (whole wheat)
- frozen peas (2 portions, weight according to dietary plan)
- 1 shallot
- to taste celery (stalks and leaves)
- 4 stalks parsley
- 1 broth cube (homemade, optional)
- 2 tbsp tomato sauce (homemade)
- 1 3/4 cups water
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)
- 1 drizzle extra virgin olive oil (raw)

Preparation
Rinse the frozen peas under running water to remove the glaze.
Clean the shallot and cut it in half.
Wash the celery thoroughly.In a pan, add the frozen peas.
Add:
– the shallot;
– the celery;
– a few stalks of parsley;
– a vegetable stock cube [optional];
– 2 tablespoons of tomato sauce;
– 1 3/4 cups of water;
– a pinch of salt;
– a pinch of pepper;
and bring to a boil.Let cook with a lid, preferably glass, and on low heat for 10 minutes.
In another pot, cook the pasta al dente, drain it, and quickly rinse it under running water.
In case of brothy first courses, to avoid blood sugar spikes, it’s advisable to cook the pasta separately and then rinse it and add it to the brothy sauce prepared separately; this way, the starch released by the pasta in the cooking water is eliminated.Meanwhile, bring the broth with peas back to a boil.
Add the pasta and mix.Plate.
Grind the pepper and drizzle with extra virgin olive oil.Your pasta and peas in broth is ready.
