Savory Ring with Asparagus, Salami and Cheese

in ,

The SAVORY RING WITH ASPARAGUS, SALAMI AND CHEESE is an indulgent spring savory cake, perfect to serve with an aperitif or as an appetizer at the start of a lunch, and also ideal to take in the traditional picnic basket to the beach or mountains on warm early-season days, when simple yet tasty dishes are desired.

The secret of this ring is the softness of its batter and the richness of the filling, well balanced in flavors: the savory taste and aroma of the salami, the creaminess of the cheese, and the unmistakable herbaceous flavor and meaty texture of the asparagus, which can evoke spring even when frozen. The ring is easy to prepare, as you will see from the recipe, and can be made a day ahead if kept cool. Serve it warm if you can, but it’s also truly delicious cold.

Ingredients

  • 3 eggs (medium)
  • 3.7 fl oz sunflower oil
  • 3.4 fl oz milk
  • 2 1/3 cups all-purpose flour (00)
  • 1 sachet instant baking powder for savory preparations
  • 3.5 oz salami
  • 3.5 oz smoked scamorza cheese
  • 2.8 oz sharp provolone
  • 8.8 oz asparagus
  • to taste salt
  • to taste black pepper

Tools

  • 1 Bundt/tube pan
  • 2 Bowls
  • 1 Hand whisk
  • 1 Vegetable peeler
  • 1 Small saucepan

Steps

  • The preparation of the SAVORY RING WITH ASPARAGUS, SALAMI AND CHEESE is very simple and quick.

Peel the asparagus, remove the woody base and cut them into coarse slices, leaving the tips whole. Then blanch them for 2 minutes in boiling water. Drain and let cool.

  • In a bowl put the eggs and beat them lightly with a hand whisk, add the oil, the milk, season with salt and pepper and combine everything.

In another bowl put the flour with the baking powder for savory tarts and mix. Pour the egg mixture into the flour and mix everything together.

  • Add the cheeses, the salami cut into cubes, the asparagus (except the tips that you will use for decoration) and fold in with a spoon.
Butter and flour a tube/bundt pan with a diameter of 10.25 in, pour in the batter and level the surface.

Decorate with the asparagus tips cut in half and bake the savory ring with asparagus, salami and cheese in a preheated static oven at 356°F for about 40 minutes. Check for doneness using the classic toothpick test.

  • Once baked, remove from the oven and let cool completely before unmolding.
