Ingredients

  • 1.75 lb chicken breasts
  • Half glass white wine
  • to taste extra virgin olive oil

  • 3.5 oz arugula (about 5 cups loosely packed)
  • 1.4 oz Parmesan cheese (about 1/3 cup grated)
  • 5 almonds (unpeeled)
  • 2 tbsp extra virgin olive oil
  • 4 tbsp water (cold)

  • 3 tbsp cooking cream (optional)

Preparation of chicken bites with arugula pesto

  • To start, prepare the arugula pesto. In the mixer cup combine all the ingredients and blend for 10-15 seconds, until you obtain a smooth cream.

    Set the pesto aside and move on to the chicken.

    Remove any excess fat and small bones from the chicken breast. Then cut it into bites of roughly the same size and coat them in flour.

  • In a large pan lightly sauté the oil, add the chicken bites well shaken to remove excess flour and brown them over high heat on all sides to seal the meat. Add the white wine and let it evaporate.
    Pour in a glass of water, lower the heat, season with salt and pepper, and cook, stirring often.
    When almost ready, add the arugula pesto and let the sauce reduce slightly.

  • Turn off the heat, plate up and enjoy your chicken bites with arugula pesto hot and creamy.

VARIATION

If you like, you can add 3 tablespoons of cooking cream to taste.
