- 9 oz mozzarella (preferably a day-old)
- 8 slices sliced sandwich bread (pancarrè)
- 2 eggs

Steps
The preparation of MOZZARELLA IN CARROZZA is really very easy and quick.
First, beat the eggs well. Remove the crust from the bread slices and cut them into neat squares. It’s important that the portions are fairly small; slice the mozzarella a little thick so you can taste it between the bread slices.
Dip the bread in the egg, place on half of them a slice of mozzarella that has been lightly patted with kitchen paper to dry a bit, and close with the remaining slices of bread.
Moisten the edges with a little water, sprinkle a bit of flour on them, cover with the other slice of bread and press the edges to seal them slightly.
Then coat the mozzarella sandwiches in breadcrumbs. Repeat the operation a second time to ensure the breading is double enough to prevent liquids from escaping during frying. Fry in a shallow amount of oil until golden.
Turn the mozzarella sandwiches so they cook well on both sides: this is why small portions are useful.
Drain on paper towels, lightly salt and enjoy while hot and stringy.
