The coral bean cooked in a pressure cooker is a side dish that is easy and quick to prepare, perfect for the whole family.
Coral beans are legumes rich in water (about 90%), fiber, and minerals, with few calories (18 kcal), despite the name they are not beans but a variety of green beans that are picked when the bean is still immature and there are no seeds inside the pod or they have just appeared, they do not cause intestinal bloating and are very digestible.

Ingredients for Coral Bean Cooked in Pressure Cooker:
- 1.3 lbs coral bean
- 1 medium onion
- 1 oxheart tomato (optional)
- 1 clove garlic
- 4 tbsps extra virgin olive oil
- 1/4 cup dry white wine
- 2.7 tbsps vegetable broth (or water)

Steps for the Preparation and Cooking of Coral Beans.
Wash the coral beans well, then with a knife cut off both ends and halve them if they are very long.
Peel the onion, halve it, and slice it thinly.
Wash the oxheart tomato, dry it well, and slice it not too thinly (you can also choose not to use the tomato)
In the pressure cooker, add the extra virgin olive oil and garlic clove, turn on the gas and when the oil starts to heat, add the onions, stir well and let them flavor well, add the tomato slices and finally the coral beans, salt and pepper.
When the coral beans are well flavored, deglaze with the dry white wine, when it has evaporated add a little vegetable broth (do not add too many liquids because during cooking the coral beans will release a lot of liquids), adjust salt and pepper and close the lid.
Bring the pot to pressure over medium heat, lower the heat and cook for 8 minutes, after the time has passed, turn off the gas, let the pot vent and then remove the lid.
COOKING IN THE MULTICOOKER:
