The CARDOONS PARMIGIANA are a simple and quick dish to offer either as an appetizer or as a side for meat or fish.   • 1 cup Parmesan cheese
  • to taste butter
  • 1 lemon

  • Preparing these cardoons parmigiana is really very simple and within everyone’s reach.
    Start by thoroughly cleaning the cardoons: remove the fibers with the help of a knife or a peeler, cut them into pieces about 3 1/8 inches and place them in a bowl with water and lemon juice.
    Bring a large pot of salted water to a boil, immerse the cardoons and cook them over low heat until softened.

  • Drain them in cold water to stop the cooking and drain well.

    In the meantime prepare the béchamel (recipe).
    Butter one or more baking dishes, spread a layer of béchamel on the base, then start with a first layer of cardoons, béchamel, Parmesan, salt and pepper.

  • Continue layering in this way until you have used all the ingredients. The last layer should be finished with béchamel and plenty of Parmesan to create that irresistible crust.

  • Bake the cardoons parmigiana in a preheated oven at 356°F for about 20 minutes or until a nice golden, crispy crust forms on top.
    Remove your tasty and delicate cardoons parmigiana from the oven and serve them hot.
