Vegetable and Chicken Spring Rolls

The SPRING ROLLS are one of the most famous dishes of Chinese cuisine, known and appreciated in their many and varied versions by people all over the world. But what are they?
Spring rolls are wrappers made of rice paper or wonton dough, filled with various vegetables and then fried.
Given the enormous breadth of Chinese culinary culture, there are traditionally numerous versions and recipes for spring rolls, made with many different ingredients depending on availability and the region.

Ingredients

  • Rice paper sheets
  • 9 oz chicken breast
  • 1 carrot (large)
  • 1 stalk celery
  • 2 spring onions
  • 4 oz bean sprouts
  • to taste extra virgin olive oil
  • 2 tbsp soy sauce
  • peanut oil (for frying)

Steps

  • Start by washing and trimming the vegetables. Dry them and cut them into fairly thin strips. Meanwhile, cut the chicken breast into cubes. Once you have the filling ready, proceed with cooking.
    In a wok or a large frying pan heat 2 tbsp oil, add the chicken and stir-fry it for a few minutes, then add the carrots, celery, spring onions and the zucchini. Cook until the vegetables are done but still fairly crisp (about 10 minutes).

  • Near the end of cooking add the soy sauce and the bean sprouts and let everything absorb the flavors. Taste the mixture and, if necessary, adjust with a pinch of salt.
    Turn off the heat and let cool.
    While the mixture cools, prepare the wrappers. Thoroughly wet a clean kitchen towel, then separate the rice paper sheets and, one at a time, place them on the towel covering them on the surface and let them soften for a few minutes.

  • As the rice sheets become ready, proceed with filling. Place one tablespoon of filling on each sheet, cover it with one corner of the square, fold the two side corners and finally roll up to form a long roll, sealing it by wetting the final corner.
    Continue until all the ingredients are used.
    Heat plenty of peanut oil and when it reaches the right temperature, immerse the rolls, making sure to brown them on both sides.

  • When your spring rolls are nicely golden, remove them from the oil and let them drain on paper towels.
    Bring the spring rolls to the table hot, served with soy sauce or with a sweet-and-sour sauce.
