Ingredients

  • 1.3 lb green beans
  • 1 clove garlic
  • 1 lemon
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • To begin, clean the green beans. Trim both ends with a knife and rinse them under running water.
    In a large pot, bring plenty of salted water to a boil. Once boiling, add the green beans and cook for 10–15 minutes without covering.
    They should be cooked but remain crisp. To be sure, taste one or two of the thicker beans to check doneness.

  • Drain them and place them in a bowl with ice water to stop the cooking and set their color.
    Let them cool and drain. In a bowl put the lemon juice and salt and stir to dissolve the salt. Add the olive oil and the garlic (with the germ removed), chopped into pieces, and mix everything until you obtain a fairly thick emulsion.
    Transfer the beans to a bowl, dress them with the emulsion, toss well and serve.
