Steps

  • The preparation of CHICKEN WITH ROMANESCO BROCCOLI AND PARMESAN SHAVINGS is very easy and quick.

    Clean the romanesco broccoli by removing the leaves and separating the florets from the stalk. Put salted water to boil; when it reaches a boil add the romanesco florets and cook for about 10 minutes. They should be cooked but still crunchy.
    Drain them, place most of them in the blender jug together with the milk, adjust the salt and blend everything until you obtain a smooth and homogeneous cream.

  • Cut the chicken into cubes and dust them with flour. In a nonstick pan put a few tablespoons of extra virgin olive oil and heat it.
    Add the floured chicken cubes, shaking off the excess flour.
    Brown well on both sides, then deglaze with white wine and once it has evaporated season with salt.

    Finally add the broccoli cream and continue cooking over low heat for 5 minutes.

  • Plate your creamy chicken with romanesco broccoli and finish with the Parmesan shavings and the reserved broccoli florets.
