Jam Tart with Cherry Jam

The JAM TART is probably the most well-known and often prepared dessert in our homes. A tasty and simple-to-make dessert that never gets boring. It is indeed a traditional pastry whose recipe is often handed down in the family from mother to daughter. The jam tart is perfect to finish a lunch or dinner, or for hearty breakfasts and snacks.

Ingredients

  • 2 1/2 cups all-purpose flour (about 300 g)
  • 4.4 oz butter (cold (about 125 g))
  • 1/2 cup granulated sugar (about 100 g)
  • 1 egg (medium at room temperature)
  • 1 egg yolk
  • lemon zest
  • 1 pinch salt
  • cherry jam

PREPARATION JAM TART WITH CHERRY JAM

  • Making the JAM TART WITH CHERRY JAM is really simple and quick.

    First, prepare the shortcrust pastry. Pour the flour into a bowl or into the bowl of a stand mixer fitted with the paddle. Create a well in the center and add the cold butter cut into pieces, the sugar, a pinch of salt, and the lemon zest.

    Work everything quickly until you obtain a sandy mixture.

  • At this point add the room-temperature eggs and incorporate them into the mixture until you obtain a smooth, homogeneous dough.

    Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.

    After chilling, take part of the shortcrust and roll it out with a rolling pin to a thickness of about 1/6 in (4 mm), using a little flour to help if necessary.

  • Cover a 8–8.7 in tart pan with the pastry, prick the base with the tines of a fork, and fill it with the jam.

    Roll out the remaining pastry and use cookie cutters to cut out the shapes you want, then carefully place the pastry shapes on the surface of the tart and seal the edges well.

    Bake in a preheated conventional (static) oven at 356°F and bake for 30–35 minutes.

    Once cooked, remove from the oven and let cool completely before removing from the pan.
