Onion Puff Pastry

Onion puff pastry, a tasty and very quick rustic dish, perfect for an everyday dinner or as an appetizer for special occasions. The recipe is extremely simple and, to make it, you won’t need to dirty pots or pans. After finely slicing the onions, I spread them on the puff pastry together with stracchino and fontal. A sprinkle of grated cheese for a super-crispy crust and into the oven. Also perfect as a fridge-cleanup option, this savory pastry is truly delicious as well as super quick. I confess I had wanted to prepare it for a while, also because, fortunately, everyone here likes onions. When I made it, though, it vanished in no time and I could only try a small piece. Ingredients

  • 1 roll puff pastry
  • 4 white onions
  • 3.5 oz stracchino
  • 3.5 oz fontal
  • 0.9 oz grated Parmesan
  • 1 tbsp extra virgin olive oil

Steps

  • First of all, clean the onions: peel them and rinse under water. Then slice them very thinly with a knife or a mandoline, if you prefer. Next, unroll the puff pastry, arrange the edges and prick the surface with a fork. Add the stracchino, the slices of fontal and then the previously sliced onion.

    Sprinkle the grated cheese, add a little oil and bake in the oven at 356°F on fan/convection setting for 25 minutes, or until the onions and the pastry edges are golden.
