Scaloppine with Kumquats

The scaloppine with kumquats is a colorful second course with a great visual impact but especially delicious, making you lick your chops!

It is made with few ingredients and in just a few minutes, you will bring a delicacy to the table; the perfect second course if you have unexpected guests, you only need 3 main ingredients: chicken breast, some kumquats, and cooking cream.

I used chicken, but if desired, you can use veal or pork, whatever you prefer.

Ingredients

  • 5.3 oz sliced chicken breast
  • 4 kumquats
  • 0.35 oz butter
  • 1 tablespoon cooking cream
  • 1/4 cup warm water
  • to taste salt
  • to taste flour
  • to taste extra virgin olive oil
  • to taste saffron spray

Steps

  • Wash the kumquats and slice them into rounds, salt and flour the chicken breast.

  • In a pan, pour a little extra virgin olive oil and add the butter piece, let it melt, and then insert the scaloppine.
    Sauté over low heat on both sides.

  • Add the kumquats and pour in the 1/4 cup of hot water to cook for 6-7 minutes.

  • Add a bit of saffron to give flavor and color, and one minute before turning off, blend with the cream.
