Ingredients

  • 1 packet baking powder
  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 5/8 cup milk
  • 1/3 cup sunflower oil
  • 1 orange (juiced)
  • 1/2 cup chocolate chips (or chunks)

How to Prepare the Eggless Orange Pound Cake

  • In a bowl, add the baking powder, flour, sugar, milk, and sunflower oil. Stir with a spoon.

  • Add the freshly squeezed juice of one orange and mix until you obtain a smooth batter.

  • Add and mix in the chocolate chips or chunks.

  • Pour the batter into a previously buttered and floured loaf pan.

  • Bake in a hot, static oven at 356°F. Let it bake for about 35/40 minutes. Be sure to check the cooking times according to your oven by doing the toothpick test.

  • Remove from the oven, let it cool slightly, and if desired, sprinkle with powdered sugar before serving.

Storage

The pound cake can be stored at room temperature, under a cake dome or in an airtight container, for 3-4 days. It can also be frozen in portions: just let it thaw at room temperature or heat it slightly in the oven before serving.
