Pumpkin and potatoes in the air fryer, a quick autumn recipe perfect when pumpkin dishes are in season, and also a side dish and a delicious vegan and vegetarian recipe.
Since I was given an air fryer I can’t stop using it — it’s a really fun “gadget” that lets you cook tasty, tempting things while greatly reducing oil use without giving up flavor!
Cooking in an air fryer is a mix between frying and traditional oven baking: a powerful heating element warms the cooking chamber and a fan distributes the heat. The fat on the surface of foods, thanks to the hot circulating air inside the chamber, fries them lightly without soaking them, speeding up cooking times and limiting odors in the house.
Today I’ll show you how to prepare a very quick and tasty side dish made with pumpkin and potatoes, typical of the autumn season that will please not only adults but especially the little ones.

Ingredients to make pumpkin and potatoes in the air fryer
- 1 1/3 lb potatoes
- 1 1/3 lb Delica pumpkin
- to taste salt
- to taste extra virgin olive oil
- to taste rosemary
- to taste black pepper

Rinse the pumpkin, slice and peel it, then cut it into medium-sized pieces. Peel and rinse the potatoes as well and cut them into pieces.
Place everything in a bowl, season with salt, pepper, rosemary and a good drizzle of oil, mix and pour everything into the air fryer basket.
Cook for 20 minutes at 392°F, taking care from time to time to pull out the basket and shake the contents so you mix everything without crushing it.
When cooked, transfer the side dish to a serving plate and serve hot and fragrant.
