To make the olive cream cheese spread, finely chop the olives with a good food processor, then mix them into the cream cheese. The olive cream is ready to be used for pasta, bruschetta and canapés, sandwiches and much more. You can substitute the spreadable cheese with well-drained ricotta or robiola.
