Ingredients to make the “sugo” with zucchini, sausage and cherry tomatoes
- 2 zucchini (large)
- 1 onion (large)
- 14 oz sausage
- 2/3 cup white wine
- to taste salt
- to taste extra-virgin olive oil
- 10 cherry tomatoes

How to make sausage and zucchini sauce with cherry tomatoes
To make pasta with sausage and zucchini, start by peeling, rinsing and chopping the onion. Put it in a pan, add a drizzle of oil and let it soften before adding the sausage, removed from its casing and crumbled.
Pour in the wine, let it evaporate over high heat and once it has reduced add the cherry tomatoes cut into quarters and the zucchini, rinsed, trimmed and cut into small cubes.
Cook everything until the zucchini are soft, adding a little water if needed; salt is not necessary because the sausage is already flavorful. Once the sauce is ready, combine it with the pasta along with a handful of grated cheese, or enjoy it with bread, bruschettes, or on its own.
Storage, notes and tips
The sauce can be stored in the fridge, well sealed in an airtight container for 48 hours. For a vegetarian version, omit the cheese.
