Ingredients to make pasta with zucchini and sausage
- 1 lb 2 oz dried pasta
- 2 zucchini (large)
- 14 oz sausage
- 1 onion (large)
- as needed extra virgin olive oil
- 10 cherry tomatoes
- as needed extra virgin olive oil
- 5 fl oz white wine (about 2/3 cup)
- 1 cup grated Parmesan (or Grana Padano)

Preparation of pasta with sausage and zucchini
To make the pasta with sausage and zucchini, start by peeling, rinsing and chopping the onion. Place it in a skillet, add a drizzle of oil and let it soften before adding the sausage, crumbled and removed from its casing.
Pour in the wine, let it evaporate over high heat and once it has reduced, add the cherry tomatoes quartered and the zucchini, washed, trimmed and cut into small cubes.
Cook everything until the zucchini are soft, adding a little water if needed; no salt is necessary because the sausage is already seasoned. Meanwhile cook the pasta and drain it al dente, add it to the sauce along with a bit of the pasta cooking water, add the cheese and stir until you achieve the right consistency.
Arrange on a serving plate and serve immediately — our pasta is ready to be enjoyed.
Storage notes and tips
The pasta with zucchini and sausage should be enjoyed immediately, but if you have leftovers store it in the fridge for up to 24 hours and reheat in a pan over high heat with a little oil before eating; it won’t be as good as freshly made, but will still be tasty. The sauce, however, can be stored in the fridge, well sealed in an airtight container for 24 hours. For a vegetarian version, omit the cheese.
