Grandma Anna’s Apple Cake

The Grandma Anna’s apple cake is a really special recipe for me because it belongs to my mom, Anna.
Among the treats she prepared for us, this cake was my dad’s favorite, my brother’s… and especially mine. It was always so soft, fragrant, with an unmistakable aroma that filled the whole house.
Needless to say, it didn’t last long: we all had a sweet tooth and one slice after another disappeared.
In addition to the apple cake, there is another dessert full of memories in my heart: the jam tart, aunt Franca’s recipe, my mom’s sister. Every time I prepare it, it feels like reliving those beautiful moments together with her.
Today, mom still makes her apple cake, even for her grandchildren. So I decided to give it the name it deserves: Grandma Anna’s apple cake.

Ingredients for Grandma Anna’s Apple Cake

  • 4 apples
  • 1 2/3 cups all-purpose flour
  • 3/4 cup sugar
  • 1/4 cup butter
  • 1/4 cup milk
  • 2 eggs (medium size)
  • 1 lemon zest (and juice)
  • 1 pinch salt
  • 1 packet baking powder
  • to taste powdered sugar (optional)
  • to taste brown sugar (for the surface)

Preparing Grandma Anna’s Apple Cake

  • I wash and peel the apples, cut them into quarters, remove the core, and chop them. I place them in a bowl with lemon juice to prevent browning.
    Meanwhile, I beat the eggs with sugar using an electric whisk until the mixture is light and frothy. I add melted butter and continue whisking to make the batter smooth and creamy.
    I add a pinch of salt, grated lemon zest, and milk. I continue whisking for a few more seconds, then add the sifted flour and baking powder. I mix well with the whisk until the batter is smooth.
    At this point, I fold in the chopped apples and any remaining lemon juice from the bowl. I set aside a small amount for the final decoration. I gently mix with a spatula.
    I pour the batter into a 9-inch springform pan, already buttered and floured (or lined with parchment paper).
    I distribute the reserved apple pieces on the surface and sprinkle with brown sugar.
    I bake in a preheated static oven at 350°F for about 45–50 minutes.
    I do the toothpick test: if it comes out dry, the cake is ready.
    I let it cool completely before removing it from the pan, then sprinkle with powdered sugar and… finally, it’s time to taste!

Storing Grandma Anna’s Apple Cake

The Grandma Anna’s apple cake can be stored at room temperature for a maximum of 3 days, covered with a cake dome or in an airtight container.
However, I assure you it will be gone much sooner: it’s so soft and fragrant that one slice leads to another!

During warmer periods, you can store it in the fridge, well sealed, to keep it fresh longer.
I recommend taking it out at least 20 minutes before serving, so it returns to its natural softness.

You can also freeze it once cooked and cooled, whole or in slices.
Wrap it in plastic wrap or place it in a suitable container and store it in the freezer for up to a month. To enjoy it, let it thaw at room temperature, no need to reheat.
