The tasty polenta pizzettes are perfect to serve as an appetizer, but also for the savory buffets of your occasions.
A base of polenta with a tasty and flavorful topping of fresh tomato with tuna, anchovies, olives, and lots of gooey mozzarella! 😛
Really delicious! And they are very simple to prepare, just prepare the polenta base and let it cool. You can do this first step the day before and then top them when you need them.
For the tasty polenta pizzettes I used Valsugana Taragna quick polenta made of a mix of corn flour and buckwheat flour, but you can use whichever flour you prefer.

Ingredients
- 7 oz of Valsugana "Taragna" polenta
- 3 cups of water
- 2 tsp of salt
- 7 oz of cherry tomatoes
- 3 oz of canned tuna in oil
- 1 tbsp of Taggiasca olives
- 5 fillets of canned anchovies
- 5 oz of julienne mozzarella
- to taste of salt
- to taste of garlic powder
- to taste of oregano
- to taste of extra virgin olive oil

Steps
Pour the water for the polenta into a pot and add a scant tablespoon of fine salt.
When it comes to a boil, slowly add the polenta while stirring vigorously with a whisk to prevent lumps from forming.
Cook for the time indicated on the package, stirring occasionally.
When the polenta is cooked, pour it into a rectangular pan, let it cool, and then put it in the fridge for a couple of hours.
In the meantime, let’s prepare the topping. Wash and cut the cherry tomatoes.
Place them in a pan with a bit of extra virgin olive oil, season with salt, garlic, and oregano, and cook for 7-8 minutes.
Add the Taggiasca olives and crumbled canned tuna, lastly add the anchovy fillets and let it all flavor for another 2 minutes.
Shape the polenta with a pastry ring, press the leftover polenta to obtain a few more pizza discs. Place the discs on a baking sheet lined with parchment paper.
Top with a spoonful of the mixture and sprinkle with julienne mozzarella.
Bake at 392°F for about 10-15 minutes, just enough time to melt the mozzarella.
