Bresaola with arugula, apples and walnuts. The Creative summer salads or simply the Salads in general are my passion, and those I love most are salads with fresh fruit and dried fruit, just like this salad with arugula, apples, walnuts, bresaola, and Grana. A salad that, if accompanied by oven-flavored bread crostini or simple homemade bread, becomes a healthy and light main dish — truly delicious! Ingredients
- 2 apples
- 4 oz bresaola (sliced)
- 2 oz walnuts
- 2 oz Grana Padano PDO (or Parmesan)
- 7 1/2 cups arugula
- to taste extra virgin olive oil
- to taste salt

Preparation
To make this salad, start by arranging the arugula (already cleaned) on a plate (I buy the pre-washed bagged arugula). Then rinse, peel and slice the apples with a mandoline, a vegetable peeler or a very sharp knife — as long as you can make thin slices. Place them over the arugula and then the shavings of Grana. Finish by scattering the broken walnut kernels on top. Season with salt and olive oil and bring to the table. Enjoy immediately.
Storage notes and tips
This salad should be enjoyed immediately to prevent the fruit from oxidizing. You can replace the apples with flat peaches (donut peaches) or nectarines when in season, and you can also add a few drops of balsamic glaze or lemon juice.
