Ingredients for sausage with potatoes and artichokes

  • 10 artichokes (hearts only)
  • 2.2 lb sausage
  • 1 onion (medium)
  • 4 cups potatoes
  • to taste roast seasoning (with salt)
  • 1/4 cup white wine
  • to taste parsley

Steps

  •  Rinse the artichokes under running water, remove the outer leaves, also cut and peel the stem thoroughly. Then cut off the top of the flower and take only the heart from each.

  • As you go, place the hearts in a bowl of acidulated water (with lemon juice or vinegar); the acidity will prevent them from darkening.

  • Peel the potatoes, rinse them and cut into chunks, then peel and finely chop one onion. Place the potatoes, onion, artichokes and mixed roast seasoning in the air fryer basket or on the oven tray and drizzle with oil. Mix and cook in the air fryer or convection oven for 15 minutes at 356°F, stirring occasionally.

  • Remove from the oven, add the sausage and drizzle with the white wine. Cook for another 25 minutes, turning occasionally.

  • Remove from the oven, finish with chopped parsley if you like, mix and transfer to a serving dish. Serve hot.

Storage and tips

Sausage with artichokes and potatoes can be cooked in the oven or in an air fryer; cooking times and temperatures are quite similar, so choose according to your preferences.

Store leftovers in the fridge in an airtight container and consume within 24 hours.
