Pasta with Butter and Olives

Distinctive and quick pasta with butter, olives, chili and parsley, a perfect idea for one of those quick and inexpensive first courses to enjoy with family or for a spaghetti night with friends. Have you ever tried pasta with Taggiasca olives and butter? If you’ve never made it, today I’ll tell you how to bring to the table a quick and distinctive first course that will win you over at the first bite. To make Taggiasca olive and butter pasta, just put the water on the heat and cook the pasta while you prepare the sauce, just like for Butter, anchovy and lemon pasta or Butter, lemon and Parmesan pasta. Once the pasta is cooked, add it to the sauce and toss with some cooking water and Parmesan — the result will surely surprise you! Are you ready to hurry into the kitchen? Ingredients

  • 12 oz pasta
  • 5 oz Taggiasca olives (in oil)
  • 1 bunch parsley
  • 1 pinch red pepper flakes
  • 3 tbsp butter
  • to taste salt
  • 3/4 cup grated Parmesan (or Grana Padano)
  • to taste lemon zest
  • 1 clove garlic

Preparation

To make this quick and distinctive first course with butter and olives, start by putting the water on the heat for the pasta, then prepare the sauce.

  • Chop the parsley and olives, gently melt

  • the butter in a pan, add a whole clove of garlic and as soon as it starts to sizzle add the olives, the parsley, the lemon zest and a little chili. Let it heat for a minute and add the pasta drained while still al dente.

  • Pour in cooking water as needed to finish cooking and toss with grated cheese. Remove the garlic, plate and serve hot.

Storage and tips

The pasta with butter and olives should be prepared and eaten immediately; however, you can prepare the sauce a few hours in advance and reheat it to melt the butter that will have solidified before dressing the pasta.
