- 1 slice mortadella (about 3/8 in thick)

Preparation
Buy a large slice of mortadella from the deli about 3/8 in thick. Heat a grill pan until smoking hot and place the mortadella slice on it; grill it for one minute without moving it to keep the grill marks as precise as possible. Then flip it and grill the other side for a few more seconds (the plate cools slightly after cooking the first side). Place the slice on a plate, divide it into wedges and garnish with stracciatella,
crushed pistachios and balsamic glaze. Serve hot.
Storage and notes
Grilled mortadella with stracciatella is a starter that should be served hot and just made; I do not recommend preparing it in advance or storing it.
