Ingredients to make light sugar-free granola with dark chocolate

  • 3 7/8 cups (about 12.3 oz) rolled oats
  • 2.8 oz (about 3 oz) puffed rice
  • 1/2 cup (about 2.8 oz) almonds
  • 3/4 cup (about 2.8 oz) walnut halves
  • 1/2 cup (about 2.8 oz) hazelnuts
  • 3/4 cup (about 4.2 oz) dried fruit (mixed, such as raisins, pineapple, red berries)
  • 1/4 cup (about 1.4 oz) cashews
  • 3 tbsp + 1 tsp water
  • 7 tbsp (about 1/2 cup) acacia honey (or orange)
  • 6 tbsp (about 3 fl oz) sunflower seed oil
  • 5.3 oz (about 3/4 cup) dark chocolate 70% (80%)

How to make Light sugar-free granola with dark chocolate

  • Before you start, note that the amounts of nuts and dried fruit are highly indicative and can be varied to your liking, provided the total weight remains the same.

    I often buy ready-made mixes of nuts and dried fruit; they can be found in most supermarkets.

    Gather all the dry ingredients in a bowl and mix, then add the honey, oil and water. Work until you obtain a homogeneous mixture where everything is well coated and evenly distributed.

  • Line the baking sheet with parchment paper, spread the granola on it and level it well, compacting with your hands or a spatula.

    Place in the oven at 302°F for 60 minutes; as soon as it begins to brown, check that the raisins and red berries are not burning, otherwise lower the temperature.

    Leave to rest in the turned-off oven for 20 minutes, then remove, let cool completely and only then add the dark chocolate cut with a knife into large chunks.

    Store the granola tightly sealed in airtight jars; it will keep for a long time without losing its crispness.

    To give it an extra kick, you can add seeds of your choice to the granola.
