Sicilian lemon granita, grandma’s recipe, as good as the one from the café using lemon juice, also perfect for a typical Sicilian breakfast together with the famous Brioches col tuppo. This is a vegan, vegetarian and gluten free dessert of incredible deliciousness; it belongs to Sicilian cuisine and grandma’s recipes and is an exceptional Sicilian dessert, just like the equally famous Gelo di limone. Our Sicilian summers as children in the ’80s–’90s were marked by loud music coming from the little three-wheeled vans set up as mobile ice-cream parlors, and when the Neapolitan melodic tunes poured from the streets into the houses, the phrase was: “sta passannu u gilataro!” Often we’d run into the street; a granita cost 1000 Lire and a brioche 500 Lire — some got it almond-flavored, some chocolate and some lemon, and they were all so good — maybe because they truly were, or maybe because the carefree age made everything seem so beautiful and tasty… Today, perhaps due to European regulations, you see fewer mobile granita vendors and we are all more doubtful about hygiene and many other things, so we rarely stop to buy a granita and a “smoky” brioche among the traffic-filled streets of Catania. Nevertheless, granita and brioche remain the musts of Sicilian summers, whether bought at a café or made at home. Yes, because granita is accessible to everyone, a “poor man’s ice cream” you can make at home, originally prepared with snow and syrups. Snow collected in winter and stored in shaded mountain crevices was brought down to towns and cities in summer and sold to make this refreshing dessert. Today, after already explaining how to prepare almond granita even without a special machine, I will explain how to make lemon granita at home without an ice cream maker. Ingredients to make lemon granita
- 2 1/2 cups Ice (or water)
- 1 1/4 cups Lemon juice
- 3/4 cup Sugar
- 1/3 cup Water

Preparation of lemon granita
To make lemon granita without an ice cream maker, always keep the ice in the freezer so it’s ready when you need it.
Prepare a syrup with water and sugar: simply mix them together and bring to a gentle boil, then turn off the heat and let it cool.
Squeeze the lemons and you should get about 250–300 ml (about 1 to 1 1/4 cups), depending on personal taste.
Mix the lemon juice with the syrup and place in the freezer for at least 2 hours; the temperature should drop to nearly the freezing point.
In a blender, combine the ice and the chilled lemon syrup, and blend for a few minutes until you obtain a very fine texture.
For this granita I used a very powerful blender, like a Thermomix-type machine, but if you don’t have one you can use other methods.
Second method: instead of using ice, after making the syrup, dilute it with 600 g of water, pour the liquid into an ice tray to make frozen cubes, then blend the cubes to obtain a creamy consistency right before serving the granita.
Third method: you can put the mixture in a glass bowl and place it in the freezer; simply stir it well every 45 minutes until you get your granita, and you can make it smoother with a couple of quick passes with an immersion blender once it’s semi-frozen to avoid unpleasant ice crystals.
Fourth method: pour the chilled syrup and lemon juice mixture into the bowl of an ice-cream maker and proceed until fully churned.
Notes and tips
Store leftover granita in the freezer; simply take it out about ten minutes before serving and stir vigorously with a spoon or give it a couple of quick pulses with an immersion blender to restore its original texture.
