Ingredients for a 9-inch super soft cocoa bundt cake

  • 5 egg whites (approximately)
  • 1 cup sugar
  • 1 pinch salt
  • 1.5 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup water
  • 1/2 cup vegetable oil
  • 1 packet baking powder
  • as needed powdered sugar (for decoration)
  • 1 vial vanilla flavoring

Preparation of the super soft cocoa bundt cake

As you will read, the preparation of this bundt cake is extremely quick, so I recommend first turning on the oven and setting it to static mode at 350°F.

  • With a stand mixer or electric beaters, whip the egg whites (preferably at room temperature so they will fluff better and faster) with a pinch of salt. When they start to whip, add about 1/4 cup of sugar (taken from the total 1 cup required in the recipe) and continue whipping until you get a smooth, shiny, and firm meringue. Now set aside the whipped egg whites, which will be mixed into the batter at the end of the procedure, and proceed with the preparation.

  • In a bowl, pour oil, water, and vanilla flavoring vial (if you don’t have the vial, you can replace it with an orange one or a teaspoon of vanilla extract), mix quickly, and then start adding the sifted flour, unsweetened cocoa powder, and baking powder.

  • Continue mixing carefully to avoid lumps, then add the sugar and stir vigorously again. You will obtain a fairly thick batter, but it should be smooth. Now take some whipped egg whites and gently add them to the flour mixture, mixing gently from bottom to top.

  • Mix carefully to avoid lumps, adding the egg whites little by little until they are all incorporated. In the end, you should have a smooth and creamy batter that is absolutely lump-free.

  • Take a bundt pan, gently grease it with vegetable oil, and flour it. Then pour the batter, making sure to level it well, and bake for about 25 minutes.

  • Baking times may vary from oven to oven, after about 20 minutes, I recommend inserting a skewer into the cake. If it comes out still wet, continue baking; if it comes out dry, the cake is ready to be taken out!

  • Let the super soft cocoa bundt cake cool in its pan, then gently remove it and garnish with plenty of powdered sugar, and it’s ready to be enjoyed in all its lightness and goodness!
