Lemon Chicken Cutlets

Lemon chicken breast cutlets in the air fryer, without eggs and without deep frying. Like the air fryer chicken nuggets, this recipe is really very easy, tasty and light and is perfect if you are looking for quick and delicious chicken breast recipes that will save your dinner in a few minutes: this main course takes 10 minutes to prepare and 15 minutes to cook. To make these air fryer chicken cutlets soft inside and crunchy outside, I recommend buying a whole chicken breast — it costs less and you can decide on the spot how to prepare it. In this case I made light, egg-free air fryer cutlets, but I could equally have made bites or strips, or even meatballs. The air fryer should be considered like a small convection oven, so if you don’t have one, feel free to use a conventional oven and bake at 200°C (392°F) for 20 minutes or until golden, turning halfway through. If, instead, you prefer traditional breaded cutlets, try the breaded chicken cutlet, grandma’s recipe, or chicken cutlets with ham and cheese. Ingredients to make air fryer chicken cutlets

  • 28 oz chicken breast (whole or sliced)
  • 1 lemon (juicy)
  • to taste roast seasoning (with salt)
  • to taste extra virgin olive oil
  • 7 oz breadcrumbs
  • 1 small bunch parsley
  • 1 pinch garlic powder (or fresh, if preferred)
  • 2 oz grated Parmesan (or Grana Padano)
  • 1 pinch chili flakes (if desired)

Preparation

When I cook chicken breast I always prefer to buy it whole because it costs less and I can decide how to prepare it. In this case I made cutlets, but equally I could have made bites or strips, or even meatballs.

  • Slice the chicken breast with a sharp knife or buy it pre-sliced; I prefer slices that are not too thin so the meat doesn’t dry out and stays tender. Gather the chicken slices in a bowl, add the lemon juice,

  • the roast seasoning mix (available at any supermarket at low cost and useful for many other preparations), a generous drizzle of oil and a pinch of chili flakes. Mix and let rest for 5 minutes.

  • While the chicken marinates in the lemon juice and oil, prepare the breading: in a bowl combine the breadcrumbs, the grated cheese, a pinch of salt, chopped parsley and a pinch of garlic powder or fresh garlic. For convenience I always keep the powdered form at home, so I used that. Mix everything together.

  • Coat the well-oiled marinated slices in the breadcrumbs, making sure the coating adheres well on both sides.

  • Place a sheet of air fryer parchment on the basket grate of your air fryer and arrange the cutlets neatly on top. Spray a little oil over the surface of the cutlets and cook at 180°C (356°F) for 15 minutes or until golden, turning halfway through.

  • The lemon chicken cutlets cooked in the air fryer are ready — serve them hot and crispy.

Storage and tips

I recommend using a ready-made roast seasoning mix because it gives the chicken a balanced flavor reminiscent of roast chicken; alternatively use salt, pepper, rosemary and oregano. If you prepare the cutlets in advance, the breading will tend to soften as it absorbs moisture from the meat, but you can reheat them before serving or assemble them ahead and keep them raw, covered with cling film in the fridge, to cook while setting the table.
