Grandma’s lentil soup, a humble and economical dish but rich in flavor, perfect to enjoy with good homemade bread.
The lentil soup of my grandmother, at least that’s what I call it, is true comfort food, like Bean and Potato Soup or Creamy Pasta with Chickpeas: warm, nourishing, healthy, and perfect for cold winter days. It’s prepared simply and is very tasty; with part of the same soup you can also make Pasta and Lentil Soup.
During the colder months I often make lentil soup — this simple and delicious dish that my children also really like, even though they don’t love vegetables but adore legumes — a budget-friendly dinner saver on many occasions.

Ingredients
- 2.5 cups lentils (I use small "mignon" lentils)
- to taste extra virgin olive oil
- 1 onion (medium)
- 1 carrot (medium)
- 1 stalk celery
- 7 oz potatoes (optional (about 1 medium potato))
- 6.25 cups vegetable broth (or water and salt)

Grandma’s lentil soup: preparation…
Sift the lentils and remove any impurities, then rinse them under running water.
Prepare a coarse mince of onion, celery and carrot, sauté it and add the lentils.
Sauté for a couple of minutes, turning often, and add 6 1/4 cups of broth or water; if using water, season with salt.
Peel the potatoes if you want to add them and add them to the lentils halfway through cooking; cook for a total of 45 minutes up to an hour maximum.
At the end of cooking, put the lid on and let the soup rest a little before serving.
Serve with a good drizzle of oil and some homemade bread, if possible.
