Giant gnocchi filled with Gorgonzola D.O.P. I don’t know if I’ve ever told you, but I adore filled pasta, I love gnocchi and I’m crazy about Gorgonzola, so the other day I decided to dedicate myself to a recipe — let me tell you more. A few Sundays ago I was looking for an idea for a tasty lunch; I had my Gorgonzola D.O.P. in the fridge and was sure it would be the star of my perfect first course, but I didn’t yet know how. At first I thought of making classic potato gnocchi, but the idea didn’t fully satisfy me, so I considered fresh filled pasta with Gorgonzola. Meanwhile I had already put the potatoes on for the gnocchi. In short, between one idea and another, I decided to treat my loved ones and myself to a dish we adored: giant gnocchi filled with Gorgonzola D.O.P.! Trust me, such a tasty delight that it disappeared in no time, and I think next time I’ll need to make a double batch. Ingredients to make giant gnocchi filled with Gorgonzola D.O.P.
- 1.3 lb potatoes (white or older)
- 2 cups all-purpose flour (or durum semolina)
- to taste salt
- 14 oz Gorgonzola D.O.P.
- 4 tbsp butter
- 1 cup grated Grana Padano (or Parmesan)
- black pepper
- to taste chopped pistachios (walnuts or hazelnuts for finishing)

Preparation
Gather the potatoes in a pot, cover with water, add salt and cook for 35-40 minutes from boiling or until a skewer slips in easily and they are soft. Drain them and let them cool slightly. Or, do as I do: place them in a bowl after washing, pour in half a glass of water and cover tightly with plastic wrap. Cook in the microwave at 750W for 20 minutes, then remove and let cool. If you can, I recommend this last method — the potatoes will absorb less water and therefore need less flour, resulting in softer gnocchi.
While still hot, mash them with a potato ricer or food mill and collect everything in a bowl.
Add the flour and salt and work the mixture until you obtain a soft, smooth, homogeneous and compact dough. Avoid adding too much flour so you don’t end up with hard, chewy gnocchi. Divide the dough into four or five portions, lightly flour the work surface, form ropes slightly more than an inch thick and cut them into pieces about 0.8 in (about 3/4 in / 2 cm) long.
Cut the Gorgonzola D.O.P. into cubes, take a piece of the potato dough, flatten it with your hands, place one or two cubes of cheese in the center and close it up as if forming a small ball. Arrange the ready gnocchi on a floured tray and bring a pot of lightly salted water to a boil. Drop the gnocchi into the boiling water and start melting the butter in a pan. Once the gnocchi float to the surface, gather them with a slotted spoon and place them in the pan where you melted the butter, add a little cooking water, sprinkle one or two handfuls of grated cheese, some chopped nuts and a dusting of pepper, cook for a couple more minutes, tossing the pan from time to time, and the gnocchi are ready to plate and enjoy.
Storage and tips
Cooked and dressed gnocchi should be eaten immediately, but if you don’t plan to eat them right away you can arrange them neatly on a tray and freeze them (raw). Once they are firm you can also collect them in a food bag and store them in the freezer. Thaw them for about ten minutes at room temperature and drop a few at a time into boiling water, wait for them to float before draining and dressing them.
