The very soft Orange Loaf Cake, like the Lemon pound cake (four quarters), is an easy and quick dessert you can make in just 10 minutes — a simple and delicious recipe that will give you a very tender, fragrant orange cake, ready to go into the oven and then to be eaten slice after slice at breakfast or as a snack. This recipe is fully inspired by the Lemon poppy seed cake, an equally excellent and fragrant lemon and poppy seed loaf. Ingredients
- 1 2/3 cups all-purpose flour
- 4 eggs
- 7/8 cup granulated sugar
- 2/3 cup plain yogurt
- 6 tbsp butter
- orange zest (grated – from 2 oranges)
- 2 1/2 tsp baking powder
- 1 pinch salt
- 1 tsp vanilla extract
- 8.8 oz powdered sugar
- 1/4 cup orange juice

Preparation
To make the glazed orange loaf cake, pour the melted butter into a large bowl, add the grated orange zest, combine and set aside. In a large bowl, beat the eggs and granulated sugar with a mixer until frothy, then add the butter and orange zest mixture. Once blended, add the yogurt (or cream). Mix the baking powder into the flour and then incorporate it into the rest of the batter little by little. Line a 9.5-inch loaf pan with parchment paper, pour in the batter, level it and bake in a static oven at 338°F for 55 minutes, but always perform the toothpick test before removing from the oven. Once baked, let it cool for a few minutes, then transfer to a wire rack and wait for it to cool completely.
Once the loaf has cooled, prepare a glaze by working the powdered sugar with the orange juice, adding the juice little by little and adjusting based on the desired consistency — it should not be too runny. Pour the glaze over the loaf and use a spatula to spread it evenly. (THE STEPS ARE IDENTICAL TO THOSE YOU’LL SEE IN THE Lemon poppy seed cake RECIPE; TAKE A LOOK IF YOU HAVE ANY DOUBTS). Wait about 30-40 minutes and the glaze will set: the glazed orange loaf cake is ready to enjoy!
