Sausage, peppers and potatoes in a skillet. The combination of peppers, potatoes and onions is already delicious on its own, but if you also add sausage you’ll prepare a fantastic meat main course and an easy pepper recipe that’s extraordinarily tasty, perfect for lunch or dinner. Some time ago we prepared the sausage with peppers and potatoes baked in the oven; today instead we make a skillet version, perfect for when it’s hot and you really don’t want to turn on the oven! - 2 lb 10 oz sausage
- 2 red bell peppers (medium-sized)
- 2 red onions (or white)
- 1 lb 5 oz potatoes
- to taste salt (only if needed)
- to taste extra virgin olive oil

Preparation of skillet sausage with potatoes and peppers
To make the sausage in the skillet with the peppers, start by peeling and slicing the onion, then put it in a skillet with a drizzle of oil and let it soften over medium heat. Meanwhile rinse the peppers, remove the stem, seeds and membranes, cut them into pieces and add them to the onions; let them release their flavor and add the sausage.
Lower the heat, cover and cook on low for 20 minutes. When the sausage has released its juices, add the peeled, rinsed and diced potatoes. Stir and cook for another 10 minutes with the lid on.
After the time has passed, adjust the salt if necessary (sausage is usually quite salty) and, gently stirring once or twice, wait for both the potatoes and the sausage to begin to brown in the cooking juices. Let them go a few more minutes, then turn off the heat and let rest for about ten minutes with the lid on before serving. This short rest will make your dish even better.
Store any leftovers in the refrigerator and consume them within 24 hours after reheating.
