Ingredients to make mozzarella alla pizzaiola
- 2 mozzarella balls
- 1 2/3 cups tomato sauce (rustic)
- as needed extra-virgin olive oil
- as needed salt
- as needed extra-virgin olive oil
- as needed basil

Preparation
Place a pan on the heat with the tomato sauce, season with salt and cook over medium heat for about ten minutes, letting the sauce reduce well. Now add the mozzarella cut in half and a sprinkle of oregano, drizzle a little olive oil, cover the pan with its lid and let it melt for a couple of minutes. Do not overcook the cheese because it will immediately release all its water. Remove from the heat, plate immediately and garnish, if you have them and if in season, with basil leaves.
Storage and tips
Consume the mozzarella alla pizzaiola immediately after making it; prepare only the quantity you intend to eat. Leftovers can be stored in the refrigerator for 24 hours and reheated before serving, but they will not be the same as freshly made. The sauce, however, can be prepared in advance and kept in the fridge; it’s also great for dressing pasta.
