Zucchini, pancetta and cream — a quick sauce for pasta. Have you ever tried pasta with zucchini, pancetta and cream? If you haven’t made it yet, try it now, because this quick and tasty sauce is perfect for dressing any type of pasta you prefer and for making a delicious scarpetta! Like many other Easy and quick zucchini recipes, this dish is a savory dinner- and summer-lunch-saver, perfect while zucchini are in season, just like pasta with zucchini cream and ricotta. Very quick to make and very flavorful, this sauce with zucchini, pancetta and cream is so delicate, creamy and enveloping that we can only run to the kitchen to prepare it together! Ready? Ingredients

  • 1 zucchini (large)
  • 1 onion (medium)
  • 7 oz pancetta
  • 3/4 cup cooking cream (or robiola or ricotta (about 200 g / 7 fl oz))
  • to taste salt
  • to taste black pepper
  • to taste milk

Preparation

  • To make this sauce for pasta with zucchini and pancetta, start by peeling and finely chopping the onion, then trim the zucchini and cut them into small cubes. Let the onion soften in a generous drizzle of oil,

  • add the pancetta and let it cook over high heat.

  • Add the zucchini and, if necessary, adjust the salt; let them soften and then brown.

  • Once cooked, golden and flavorful, finish by adding the cream and, if needed, a little milk to loosen it, sprinkle with black pepper and stir. Once you have a creamy sauce, cook the pasta, drain it al dente and add it to the sauce, then toss with a little Grana or Parmesan cheese.

This flavorful sauce made with zucchini and pancetta can be eaten immediately and keeps in the fridge for 24 hours, well sealed in an airtight container. Reheat before serving with the addition of a little milk or water.
